以一斤熏肉为主,放1两白沙糖,茶叶1钱,把糖和茶放锅里,用几根棍子把肉担在锅里,盖上盖子,用小火,熏5分钟即可。糖放多了熏出来肉是苦的。

  熏肉:

  材料

  猪腿肉5000克。

  调料

  盐120克,味精5克,花椒5克,八角8克,桂皮15克,大葱20克,姜15克,料酒10克,白砂糖50克,红曲10克。

  做法

  1.选料、切块、腌制:最好是选用体重50千克左右,皮薄肉嫩的生猪,取其前后腿的新鲜瘦肉,用刀去毛刮净杂质,切成肉块,用清水泡洗干净,或者入冷库中用食盐腌一夜。

  2.煮制:将肉块放入开水锅中煮1小时,捞出后用清水洗净。原汤中加盐,撇去血沫。清汽后再把肉块放入锅中,加进花椒、大料、桂皮、葱、姜,同大火烧开后加料酒、红曲粉,煮1小时后加白糖。改用小火,煮至肉烂汤黏出锅。这时添加味精拌匀。

  3.熏制:把煮好的肉块放入熏屉中,用锯末熏制10分钟左右,出屉即为“熏肉”。
